Choose pork shoulder or neck; these parts of the carcass are most suitable for cooking cutlets. Using a sharp knife, cut the pulp into very small pieces and place in a deep container. Peel a small onion. Rinse and dry. Chop finely and add to minced meat. Mix well so that the onion pieces are evenly distributed throughout the meat.

  2. Grate the onion on a coarse grater.
