Step 1: prepare the meat.

First of all, we rinse the fresh neck under streams of cold running water, dry it with paper kitchen towels, place it on a cutting board and use a sharp kitchen knife to remove excess fat, veins, film, as well as small bones, which very often remain on the log house.

Then cut the meat across the grain into pieces about 2 centimeters thick. In turn, cover each with plastic wrap and beat with a kitchen hammer. We don’t overdo it, just lightly, so that the thickness of the portions decreases by no more than 5 millimeters, but at the same time they do not turn into minced meat. Then sprinkle the pieces of pork with dry red wine, sprinkle salt, ground black pepper and a mixture of spices on all sides to taste. We put the neck in a small bowl, cover it with plastic cling film, put it in the refrigerator and forget about it until use, let it marinate.

Step 2: prepare onions and mushrooms.


In the meantime, using a new knife, we remove the skins from the onions and the roots from the champignons. We rinse these products thoroughly, dry them, place them on a clean board and continue preparing. We chop the onion into cubes or strips with a thickness of 5 to 7 millimeters, chop the mushrooms in the same way or into plates and move on.

Step 3: fry onions and mushrooms.


Place a deep frying pan over medium heat and pour a little vegetable oil, two tablespoons will be enough. After a few minutes, add chopped mushrooms and onions into the heated fat. At first these ingredients will release a lot of juice and will simmer, but after about 10–11 minutes will gradually begin to fry. There is no need to bring them to full readiness at this stage. As soon as the onion becomes soft, transparent and covered with a very delicate golden crust, remove the pan from the stove.

Step 4: prepare the potatoes.


Then we begin to deal with other important components of the dish. Peel the potatoes, wash them, dry them, put them on a board and cut them into rings, cubes or bars no more than 5-6 millimeters thick. Then we throw them into a deep bowl, crush them with salt to taste, season them with all the spices specified in the recipe if desired, mix and leave them alone until needed.

Step 5: prepare the cheese and equipment.


Now remove the packaging from the hard cheese and grind it on a fine, medium or coarse grater into a clean bowl. After this, turn on the oven to preheat at 200 degrees Celsius, place a non-stick or heat-resistant baking dish on the countertop, grease its bottom, as well as the inner sides of the sides with the remaining vegetable oil and proceed to the next, almost final step.

How to cook baked potatoes with meat and mushrooms in the oven

You need to start working with this wonderful dish by preparing the meat. It needs to be marinated. This additional operation will make it incredibly soft, juicy and tender.

For this recipe, you can use absolutely any part of the pork carcass. For example, this could be the back of the thigh.

Pre-wash the meat, dry it and cut into medium-thick pieces. Place in a deep bowl and add all the necessary ingredients for the marinade - vinegar, soy sauce, as well as salt, pepper, Russian mustard.
