Classic recipe

Meatballs from minced chicken are easy to prepare; even a novice cook can cope with this task. First you need to choose quality ingredients. Chicken meat is sold everywhere, but not every housewife can buy a truly good product.

When choosing a fillet, pay attention to its color - it should be even, light pink, without spots or bruises. The surface of the meat cannot be sticky - this is a sign of a spoiled product.

In addition, high-quality meat has a pleasant, characteristic smell.

A good housewife makes minced meat herself, but if there is no time or opportunity, then you can buy a semi-finished product (in trusted places). If you prepare minced meat at home, then use different parts of the chicken carcass: thighs, fillets, drumsticks - such minced meat will be rich and tasty.

This recipe will be especially useful for mothers and housewives who adhere to a balanced diet. It belongs to the first level of difficulty and is suitable for all beginners.

Why chicken meatballs?

Chicken is a product in itself dietary. It is a source of easily digestible proteins. If you also choose a “low-calorie” cooking method, then a “Health” bouquet will be waiting for you on the table. Chicken meatballs - tender dish, which kids are just crazy about. However, served at a dinner party, with a delicious sauce, it will not leave anyone indifferent. Your guests will call you more than once to clarify the details of its preparation!

Preparation of ingredients

Personally, I prefer to make my own minced chicken using a food processor. And not only for the sake of confidence that it was the breast that was taken for my minced meat - the most nutritious and at the same time low-fat part of the chicken. Another reason is my passion for pre-marinating! Any meat is marinated to give it soft before cooking, eliminate bad smell, and add a unique aroma.

Pickling can replace simple soaking for 2 to 24 hours in the cold. Milk (diet option) is perfect for this. I would only recommend adding a little salt, dry cinnamon and sweet pepper powder. You can add chopped onion into rings.

Possible marinades:

  • Mustard(has a softening effect, eliminates odor)
  • Vinegar– the same properties (it is advisable to rinse both mustard and vinegar with drinking water before cooking)
  • Lemon juice– a universal means of softening meat, giving it a refined aroma; also eliminates unpleasant odor and enriches your dish with vitamin C. You can simply rub the breasts with cut lemon halves, toss with onion rings, sprinkle with your favorite chicken spices (I choose dry or grated fresh ginger root, thyme leaves, coriander, and a little white pepper. A curry mixture would also work well (at least peppercorns).
  • For fast food lovers - mixture of mayonnaise and ketchup– you can always find them in the refrigerator. This marinade does not need to be washed off, except for excess.

Just before adding to the processor, cut the breasts into small cubes.

A few secrets of easy cooking

The main principle is workpiece maximum, For example:

  • I keep minced garlic in the freezer and just grab the amount I need at any time.
  • The loaf can be prepared by drying white bread in the microwave for two days beforehand and storing it in cellophane until needed.
  • For vegetarian recipes always keep in the freezer diced carrots, zucchini, spinach, or potatoes.
  • Rice can be set aside from, say, a salad with crab meat prepared the day before.
  • The same applies to finely chopped onions. This product keeps well in the refrigerator for up to two days, the main thing is close it in a plastic container so that the smell does not spread.
  • The breasts can be washed and soaked in the marinade of your choice the night before in the refrigerator, in a tightly closed container.

Do you want to minimize the time spent cooking and washing dishes on a planned day (if you have guests or you cook in the evening after work)? Prepare as large a quantity of meatballs as you like in the freezer. Make your favorite sauce a day or two ahead and seal it in a glass jar in the refrigerator.

You will need:

Ingredients

For variations:

  • Vegetarian composition: 2-3 carrots, 1 zucchini, or 4-5 small slices of regular zucchini; in this case, reduce the amount of onion to 1 small head
  • Children: a large crust of white bread soaked in milk
  • For an “iron” diet– 150 g of fresh or frozen spinach, washed, can be boiled and strained in advance
  • Rice alternative - 2 tablespoons breadcrumbs
  • Pickled vegetables - 150 g - finely chopped
  • For spicy lovers– half a tsp. chili powder or 1 fresh crushed/chopped semi-hot green/red pepper - 1 pc.
  • For fast food lovers– 50 g of cheddar cheese, grated into minced meat, or a piece placed in the cavity of the finished meatball, 1 tbsp. tomato paste. An option is to sprinkle with grated cheese and add ketchup at the end of cooking.
  • Asian style: For frying, use a mixture of corn and sesame oils; for vegetarian filling – eggplant, grated carrots; breading – sesame seeds; bring to readiness and serve - soy sauce. In this case, do not add salt to the initial stages, and add salt to taste, at the end or at the table.

With rice, with a loaf of bread, with cheese, with herbs, with or without sauce, bake, steam or stew - choose the most delicious recipe and try to cook.

I especially invite those housewives whose families have small children to cook meatballs: it is they who most often demand the impossible from us, it is for them that we become inventors of new recipes and designers of culinary masterpieces. Meatballs are exactly the dish with which you can use your imagination one hundred percent!

In the examples of recipes given, you can replace or add something - everything here is like in a fairy tale - whatever you name the yacht, so it will float!

First, let's look at recipes for meatballs with various sauces. Their main advantage is that, even without changing the basic minced meat recipe, you can vary the tastes, obtaining new and new nuances.

Ground meat

  • Let's make the minced meat like cutlets: first, soak a slice of white bread in milk for 30 minutes.
  • After the time has passed, mix half a kilo of minced chicken in a blender with the soaked loaf and 1 egg.
  • Salt, add black pepper and beat.

The consistency should be light and airy.

Form the minced meat into balls, approximately the size of a large walnut. If the meat sticks to your hands, wet them in water. Then fry them in vegetable oil in portions on both sides and immediately transfer them to a separate bowl.

Sauce

Heat 170 ml of cream in a small ladle, add 2 tbsp. mustard, black pepper and nutmeg, keep on fire, add salt and, without bringing to a boil, remove. Serve the sauce separately from the meatballs.

This dish goes best with boiled or fried potatoes, rice and green salad.

We will make these meatballs with onions, and not just with peppers and loaves.

Mix approximately 500 g of minced chicken with 2 slices of soaked loaf and 1 very finely chopped onion. It is best to chop the vegetable in a food processor - this way the pieces will be noticeable, but not too much. There is no need to grind everything together in a blender - you should feel the onion.

We form small balls from them, bread them in flour or breadcrumbs and fry them on both sides in olive oil. Place the finished meatballs on napkins or a paper towel - let the excess fat drain off, and start preparing the sauce.

Tomato sauce

  • In another bowl (the meatballs will remain in it later), heat 2 tbsp. olive oil, add 2 cloves of garlic (from a crush) to it.
  • While they are warming up over low heat, grind 600 g of tomatoes canned in their own juice into a paste, having first removed their skins.
  • Pour into the garlic, add oregano, black and cayenne pepper, nutmeg and bay leaf.
  • Taste for salt, add more salt if necessary and pour in 1 cup chicken broth.
  • Keep on the fire without a lid for 15 - 20 minutes, then put the meatballs in the sauce, heat for 5 minutes, and put on the table.

They will be good on their own or with any side dish of your choice.

These meatballs will turn out to be very unusual and juicy, because we will cook them with fried onions, and not raw!

  1. Soak a slice of loaf in milk.
  2. Grind a couple of fillet breasts (500 - 600 g) into minced meat and fry 1 onion, cut into rings, in oil.
  3. Grind it in a blender along with the meat and squeezed bread. Salt, pepper and mix.

From the resulting minced meat we make neat meatballs, bread them in breadcrumbs, press lightly on both sides and fry until crusty over high heat, then transfer to a saucepan, add 0.5 - 1 cm of hot water and leave to simmer under the lid.

Make sure that the water does not boil away completely, otherwise the cutlets will burn.

sour cream sauce

  • 20 minutes after boiling, dilute the meatballs with 2 tbsp. flour 1 cup cold chicken broth. If necessary, the mixture can be stirred with a mixer to break up any lumps.

Pour the sauce into the meatballs. Let it simmer for 5 – 7 minutes, add 120 ml of fat sour cream and ½ bunch of finely chopped dill.

Hold for a few more minutes and serve! Chicken meatballs with rice, mashed potatoes and vegetable stew are very tasty.

In this recipe we will prepare chicken meatballs with rice in sauce.

Meatballs with rice

  • Fry 1 chopped onion until golden, add 400 g of minced chicken to it, with ½ cup of already boiled rice.
  • Break 1 egg there, salt and pepper everything and make meatballs from the resulting mixture. Bread them in flour and fry on both sides.

Sauce

  1. In a separate saucepan, heat 2 tbsp. vegetable oil, as soon as bubbles appear, add 1 tsp. flour, bring it to a light golden color.
  2. Pour in ½ cup of cream or milk. It is better to stir the sauce with a whisk to break up any lumps.

Place the meatballs and rice into the sauce and simmer for 15 – 20 minutes. Serve sprinkled with herbs.

But not everyone likes sauces, which means we’ll prepare the meatballs on their own, and just vary the minced meat recipe, making it juicy on its own. Of course, you can just find a restaurant and have a good time there without cooking or washing dishes, but sometimes you really want to feel like a culinary ace!

  • Grind in a blender alternately 500 g of fillet, 1 medium onion (it is better to cut it first so that there are no large pieces left by chance).
  • Add an egg, 2 cloves of garlic, ½ bunch of parsley and dill - approximately 60 - 80 g.
  • Mix everything, beat again if necessary and add 1 tsp directly to the minced meat. mustard, 1 tbsp. milk, ground black pepper and salt.

From the resulting mixture we make meatballs, if desired, bread them or fry them directly, and serve them immediately hot with any side dish of your choice - everything from steamed vegetables to risotto will be delicious with them.

In this recipe, the main thing is not to soak the bread, as we did in previous versions - the crackers will add a special crumbliness and lightness.

  1. Mix 450 g of minced meat with 2 tbsp. breading, finely chopped onion and chicken yolk.
  2. Pour in 3 – 4 tbsp. water - do this gradually so that the minced meat does not become too liquid.
  3. Salt, season with allspice and nutmeg.
  4. Add sugar at the tip of a knife - don’t be alarmed, this will only make the meatballs more tender.

We make the balls slightly flattened and fry in a frying pan on both sides under the lid. Serve immediately, sprinkled with herbs and garnished with mint leaves.

Here, as an addition to the minced meat, instead of bread, we will need mashed potatoes.

  • Make it just a little bit - for 500 g of meat you need 1 large potato. We prepare puree from it with milk and butter, fry 1 very finely chopped onion in a frying pan and mix them - puree and fried onion. Let cool and add minced meat.
  • Mix everything well, add salt, add nutmeg, oregano, paprika and basil. Let it stand for 15 - 20 minutes at room temperature so that the meat is soaked, and make meatballs.

These chicken and potato cutlets need to be fried in a large amount of oil so that they turn over freely. Just remember that then you definitely need to dry them on a paper towel - there is no need for excess fat.

Serve chicken meatballs with green salad and fresh bread.

A very tasty recipe that perfectly combines the tastes of cheese, crispy cracker crust and tender chicken meat.

  1. Mix 350 g of minced chicken or finely chopped fillet with 2 slices of white bread crumb soaked in milk, mix.
  2. Beat 1 egg, salt and add 2 tbsp. grated cheese. Add a little nutmeg and allspice.
  3. Roll the minced meat into a ball and make thumb deepening and put there a 1 by 1 cm block of hard cheese or, alternatively, mozzarella.
  4. Having carefully leveled the meatball, dip it in the beaten egg, then bread it in flour. Dip it into the egg again and roll it in breadcrumbs.
  5. Pour oil into a deep frying pan or frying pan so that it covers the meatballs halfway, and fry them on all sides. Ready!

If you don’t want to make such a thick breading, you can bake the meatballs in the oven. To do this, cover a baking tray with baking paper, grease it with vegetable oil and, placing pieces of cheese in balls, lay them out in rows.

We will bake the meatballs at 200°C for no longer than 20 minutes so that they do not dry out. Serve them with any side dish.

Meatballs with rice made from minced turkey or chicken are more tender and juicy. Let's try!

  • Mix 1 egg, 4 - 5 tbsp into 450 g of minced meat. rice.
  • Salt, pepper and make round cutlets slightly larger than a walnut.
  • Fry them until golden brown on each side, but not until cooked - we just need to simmer them slightly.
  • We transfer the “hedgehogs” into a saucepan, put it on low heat and fill half the container with boiling water or broth. Add some salt.
  • Leave the meatballs to simmer under the lid.
  • In the same frying pan, fry 1 onion, 1 grated carrot and 1 red bell pepper - it is better to cut it smaller. When the vegetables become soft, add 2 tbsp. tomato paste or 1 large chopped tomato without skin. Season with basil, oregano and thyme.
  • Simmer for another 5 - 6 minutes and transfer to a pan with boiling meatballs. Keep everything covered for at least 25 minutes until the rice becomes completely soft, and turn it off.

Ready! Chicken meatballs with gravy and rice with mashed potatoes will be very tasty. Bon appetit!
